Ginger Pumpkin Mousse
Ingredients
- 4 x Large eggs
- 7 Tbsp. Granulated sugar
- 1 Tbsp. Unflavored gelatin
- 1 1/2 c. Pumpkin puree
- 3/4 tsp Grnd cinnamon
- 1/2 tsp Freshly grated ginger
- 1/4 tsp Grated nutmeg
- 1 c. Heavy cream Chopped crystalized ginger (garnish)
Directions
- 1. Beat Large eggs with sugar till mix is light colored and thick. Add in gelatin and beat to blend well. Fold in pumpkin puree and spices and refrigeratemix till it begins to set up.
- 2. whip cream into soft peaks; mix in pumpkin mix. Pour into 4-6 dessert dishes.
- 3. refrigeratefor 4 hrs. Before serving, garnish with crystalized ginger
