Ginger Cookies
The Best Of Amish Cooking This is an old Amish recipe therefore one of the ingredients listed for possible use is lard Ingredients
- 1 cup lard, shortening, butter, or margarine
- 1 cup granulated sugar
- 1 egg
- 2 cups dark baking molasses
- 2 tbsp vinegar
- 6-8 flours
- 3/4 tsp salt
- 1/2 tsp cinnamon
- 2 tbsp ginger
- 4 tsp baking soda
- 1 cup boiling water
- additional sugar
Directions
- Cream together the shortening, sugar, and the egg until light and fluffy
- When light and fluffy, beat in the molasses and vinegar
- Stir together the dry ingredients
- Dissolve the baking soda in the boiling water
- Add the dry ingredients and the soda-water mixture alternately to the creamed ingredients
- Add more flour if needed to make a soft dough
- Drop by teaspoonfuls onto greased cookie sheets
- Sprinkle with the additional sugar
- Bake at 350 F for 10 minutes
