    Here's my camp fire baked potato that I make either when we are backpacking or on a good mountain car camp. This is one of my wife's favorites when we come down off the trail after some good romps in the woods, enjoy!

    Ingredients

    • 4 Jumbo Sized Potatoes (get big ones for cook time and moisture hold)
    • Butter
    • 1/4 Tsp. Dried Oregano
    • 1/4 Tsp. Dried Basil
    • 1/4 Tsp. Onion Powder
    • 1/4 Tsp. Garlic Powder
    • 1/4 Tsp. Adobo
    • 4 Squares Aluminum Foil

    Directions

    1. Get a good campfire going with a nice hot coal bed!!!!
    2. Slice potato in half but not all the way through. Slice the inside of potato with knife making a healthy amount of slits (careful not to break skin!). Coat generously with a copious amount of butter.
    3. In a small bowl mix oregano, basil, onion, garlic, adobo. Sprinkle mix over the butter on inside of potato. (this mix of dried herbs is also one of my camping 'season all' mixes that I keep in a small container just for camping/backpacking)
    4. Fold potato closed and then wrap tightly in the aluminum foil.
    5. Stick wrapped potatoes directly into the fire pits coal bed and cover with an extra couple of pieces of small/medium sized wood to kick up the flames again.
    6. Bake potatoes for 25-30 minutes in center of fire pit. For the last 10-15 minutes pull the potatoes out from the center of the fire pit to along its edge but still next to the coals. (Don't take them all the way out yet, this time is crucial for the softness of potato)
    7. Potato will make a lot of sizzling noise as the butter cooks DO NOT be alarmed by the sounds you will here of the scrumptiousness coming from the fire pit!!!!
    8. After 45 minutes take out and serve alongside your favorite other stuffs!!!!!
