Giant Avocado Banana Muffins

- 4 c. whole wheat flour
- 3 Tbsp baking powder
- 1 1/3 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cardamom
- 3/4 c. butter, softened
- 4 eggs
- 1 avocado, mashed
- 2 c. mashed bananas
- 1/4 c. packed dark brown sugar with
- 1/4 c. granulated sugar
Directions
- Preheat oven to 325 degrees F. Line giant muffin pan with fitting liners; set aside.
- In a mixing bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cardamom. Set aside.
- In the bowl of a stand mixer, beat the softened butter and granulated sugar. Once incorporated, beat in the eggs.
- Beat in the mashed avocado and bananas.
- Slowly, add in the flour mixture.
- Spoon into prepared muffin pans, about 3/4 of the way full. Bake at 325 degrees F for 25-30 minutes.
- Cool in pan for a couple minutes, then turn out onto a wire rack to continue cooling.
