German Potato Salad
Mother’s recipe Ingredients
- 6 med-large potatoes (boil til tender) cube
- 6 pieces of bacon
- 1 med onion
- 1 Tbs flour
- 1/2 Tbs sugar
- 1tsp salt
- White pepper
- 1/2 tsp celery seed
- 1beef bouillon cube
- 3/4 c boiling water
- 1/2 cup vinegar
Directions
- Cook bacon til crisp -remove from pan and set aside ( leave bacon fat)
- Sauté onion in bacon fat
- Add flour
- Add sugar
- Add salt/ pepper
- Boil water
- Add bouillon
- Add vinegar
- Add to flour mix and onion -keep smooth
- Stir til thickened
- Add bacon to potatoes ( leave a little for garnish)
- Pour thickened sauce over top-stir to mix
- Garnish with remaining bacon
- Serve warm
