  • Georgia Peach Rock Fish

    I Was looking for some Lime's to squeeze over my fresh Rock fish, and I had none, all I had was plums and two very Ripe peaches, The rest was history.

    Ingredients

    • three pounds of Rock Fish fillet's
    • Two large Southern peaches (( sweet)) 1/4 cup of olive oil
    • 1 tbs of sea salt
    • 1 tbs Miss Dash seasoning

    Directions

    1. Take three pounds of Rock fish fillet's and coat them with half your oil and take the rest and coat your Dish that your cooking you fish in, Use a Ceramic baking dish . Sorry should have said sooner. lay the Fish in the Ceramic dish. preheat Oven too 375, I use the convection oven the last ten minute's of cooking. Cut the skin off your two peaches and slice in to sections. place peaches across
    2. the top of the Fish. take all that skin and squeeze all the pulp and juice all over the fish, don't use peel. sprinkle sea salt over fish and Miss's Dash. enjoy. I hope you like it.
