  • General Tso's Chicken (Not Fried)

    Ingredients

    • 2 Tbsp. Dry sherry
    • 1 Tbsp. Dark soy sauce *
    • 2 Tbsp. Cornstarch
    • 1 lb Boneless, skinless chicken Cut into 1 inch pcs
    • 2 Tbsp. Water or possibly chicken broth
    • 1 Tbsp. Rice vinegar
    • 1 Tbsp. Regular soy sauce
    • 2 Tbsp. Dark soy sauce
    • 1 tsp Sesame oil
    • 2 tsp Sugar
    • 2 Tbsp. Peanut oil
    • 8 whl dry chile peppers
    • 2 tsp Chopped garlic
    • 1/8 tsp Powdered ginger
    • 3 x Green onion, cut into 1 inch Pcs
    • 1/4 tsp Crushed red pepper
    • 3/4 c. Roasted unsalted peanuts
    • 1 tsp Cornstarch-dissolved in
    • 2 tsp water

    Directions

    1. Combine the marinade ingredients in a medium bowl. Add in the chicken and stir to coat. Let stand for 30 mins. Combine the sauce ingredients in a small bowl.
    2. Heat a wok over high heat till warm. Add in the oil and the chiles and stir fry till the chiles darken to a deep red, about 10 seconds. Add in the chicken and stir fry for 2 min. Add in the garlic, ginger, green onion and crushed red pepper, stir fry for 1 minute. Add in the sauce and peanuts and cook, stirring for 1 minute. Add in the cornstarch solution and cook, stirring till the sauce and the chicken is nicely glazed.
