Garlic Parmesan Quinoa
I found this recipe online at www.thegraciouspantry.com, they have great clean eating recipes. For me there is only two of us so I actually halved the recipe, I found the second time I made it was able to half the cheese and the garlic powder and I used grape tomatoes (which are my favorite). Make sure you use the fresh basil it makes the dish! In my picture with the recipe I just cooked a chicken breast with some Italian Seasoning and pepper in a small amount of coconut oil. DELICIOUS! This will be a great summer dish with grilled chicken. Ingredients
- 1 cup uncooked quinoa, rinsed well
- 2 cups low sodium chicken broth
- 1 tablespoon garlic powder
- 1 cup grated parmesan cheese
- 1/2 pound cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
Directions
- Follow package directions to cook the quinoa, but substitute the water with chicken broth.
- When done, fluff with a fork and allow to cool enough so the cheese won’t melt when you add it.
- Stir in the garlic powder and parmesan cheese.
- Add the tomatoes and fresh basil.
- Stir well and serve.
