Fusilli Con Pomodori And Mozzarella
Ingredients
- 6 x -(up to)
- 8 x Ripe tomatoes, peeled and minced
- 1/2 lb Mozzarella cheese, coarsely grated
- 1/4 c. Minced fresh basil, -or possibly-
- 1 Tbsp. Dry basil
- 5 Tbsp. Extra virgin olive oil
- 2 x Cloves, chopped
- 1 Tbsp. Minced fresh parsley Salt to taste Freshly grnd pepper to taste
- 16 ounce Pasta
Directions
- In a large bowl, combine all ingredients except thepasta. Let stand at room temperature 1 hour. Cook pasta al dente. Drain. Toss pasta with tomato mix till cheese has melted. Serve immediately.
- Yield: 8 servings.
