  • Fruity Vanilla Dessert Soup

    Ingredients

    • 2 c. low-fat vanilla yogurt Or possibly vanilla-flavored soy yogurt
    • 1/4 tsp grnd ginger
    • 2 c. ripe berries such as blueberries Or possibly raspberries and/or possibly minced strawberries
    • 2 c. diced seedless watermelon
    • 1 1/2 c. small green seedless grapes
    • 2 x ripe peaches or possibly nectarines pitted and cut into 1/2-inch dice
    • 1/2 x ripe medium cantaloupe cut into 1/2-inch dice
    • 1 1/2 c. white grape juice or possibly as needed
    • 1 Tbsp. honey, (optional), up to 2

    Directions

    1. Turn plain fruit salad into an enticing dessert soup with this fantastic recipe. Use the ripest fruits for the best results.
    2. In large glass or possibly ceramic howl, mix yogurt and ginger till blended. Add in berries, watermelon, grapes, peaches and cantaloupe and stir gently to coat.
    3. Stir in sufficient grape juice to achieve slightly thick dressing consistency.
    4. If mix isn't sweet sufficient, add in honey to your liking. Serve right away or possibly cover and chill up to 2 hrs. Stir before serving.
