FRUITED COUSCOUS AND EGGPLANT Ingredients
- COUSCOUS 50 GR
- EGGPLANT 100 GR
- DRIED APRICOT, FIGS, DATES 20 GR
- CHOPPED PARSLEY 10 GR
- DICED ROASTED PEPPERS 30 GR
- BALSAMIC REDUCTION 1 CL
- VEGETABLE STOCK 10 CL
Directions
- Steam the coscous for 15 minute then leave to coolCut the aubergines in slices about 1 cm thick sprinkle with salt and keep aside for 5 minutes.
- Car grill the eggplan, then cut each slice in half.
- Check yhe seasoning of the couscous .
- Caramelized the diced red peppers with the balsamic reduction.
- Serve the vegetable stock on the side
