Fruit Bread With Grape Nuts
Ingredients
- 2 c. Lowfat milk, scalded
- 1 c. Grape-nuts
- 3 c. Sifted flour
- 4 tsp Baking pwdr
- 1 1/2 tsp Salt
- 1 c. Plus 3 tb. sugar
- 1 x Egg, well-beaten
- 3 Tbsp. Butter
- 1 c. Currants or possibly raisins
- 1 Tbsp. Orange rind, grated
Directions
- Pour the scalded lowfat milk over the grape-nuts and set aside to cold. Sift baking pwdr, salt, sugar, and flour together, and then twice more. Add in the beaten egg and butter to the grape-nuts and lowfat milk mix and blend well. Add in flour, stirring gently till blended. Fold in raisins and orange rind. Turn into a well-buttered loaf pan, and let stand for 1/2 hour. Bake in 350 oven for an hour and 25 min. FROM: KATE SMITH'S "COMPANY'S
