Fruit And Nut Muffins
Ingredients
- 1 c. Sugar or possibly less
- 1 c. Applesauce
- 1/4 c. Oil
- 3 x Egg whites
- 3 Tbsp. Skim lowfat milk
- 1 c. Whole wheat flour
- 1 c. Unbleached white flour
- 1 tsp Baking soda
- 1 tsp Baking pwdr
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/4 c. Minced walnuts
- 1/2 c. Raisins
- 1/2 c. Minced dates
Directions
- Preheat oven to 350 degrees. In a large bowl combine sugars, applesauce, oil, egg whites and lowfat milk. Mix thoroughly. Add in flours, baking soda, baking pwdr and spices. Combine till well mixed. Stir in nuts, raisins and dates. Spoon into lightly oiled or possibly paper lined muffin tins and bake for 20-30 min.
- Makes 36 muffins.
