Fruit And Cheese Pockets
Ingredients
- 1/2 c. cottage cheese, lowfat
- 1/2 c. lowfat cheddar cheese diced
- 1 x Kiwi fruit peeled and quartered
- 1/4 c. pineapple chunks in juice liquid removed
- 1 Tbsp. chives snipped lettuce leaves
- 1 lrg pita bread split in half
Directions
- In a small bowl stir together cottage cheese, cheddar cheese, kiwifruit, pineapple tidbits and chives. To serve, place lettuce leaves in pita halves. Spoon the fruit and cheese mix into pitas.
- Makes 2 servings.
- 1/2 c. strawberries may be substituted for the kiwi fruit and green onion
- may be substituted for the chives.
- NOTES : This refreshing pita sandwich doubles easily to serve four hungry lunch eaters. Great on a Warm day.
