  • Frosted Cinnamon Raisin Biscuits

    Ingredients

    • 3 c. sifted all purpose flour
    • 2 heaping T sugar
    • 4 1/2 teaspoon baking pwdr
    • 3/4 teaspoon salt
    • 1/2 teaspoon baking soda
    • 1 teaspoon cinnamon
    • 3/4 c. butter
    • 1 1/3 c. buttermilk
    • 1 c. raisins
    • 1 c. confectioners' sugar
    • 2 T lowfat milk
    • 1 teaspoon vanilla

    Directions

    1. Sift flour. Add in all other dry ingredients. Cut in butter till mix resembles coarse meal. Add in raisins and mix. Add in buttermilk, mix well till blended with spoon. (Dough will be sticky.) Knead 10 to 15 times till dough forms a ball. Place on well lightly floured board and roll to desired thickness. Cut with biscuit cutter. Place on cookie sheet sprayed with non-stick cooking spray. Bake 10 min at 450 degrees or possibly till lightly brown. Remove from oven. Cool slightly and frost. Makes 15 to 18 biscuits.
    2. Mix well. If too thick, add in a little more lowfat milk. Frost biscuits.
