  • Frisee And Radish Salad With Goat Cheese Croutons

    Ingredients

    • 2 Tbsp. Sherry vinegar
    • 2 tsp Dijon mustard
    • 1 x shallot or possibly green onion chopped
    • 1/3 c. extra virgin olive oil
    • 1 sm head curly endive torn into bite-size pcs
    • 1 bn radishes trimmed, thinly sliced
    • 12 x 1/2 inch thi French bread baguette Extra virgin olive oil
    • 4 ounce soft fresh goat cheese (such as Montrachet)

    Directions

    1. Combine vinegar, mustard and shallot in small bowl. Whisk in 1/3 c. oil.
    2. Season dressing to taste with salt and pepper. Combine endive and radishes in large bowl. (Can be prepared 4 hrs ahead. Cover salad with
    3. damp towel and chill. Cover dressing and let stand at room temperature.)
    4. Preheat broiler. Broil 1 side of bread till golden. Brush second side with extra virgin olive oil. Season with salt and pepper. Broil till bread is brown. Cut each slice into quarters.
    5. Add in dressing to salad and toss to coat. Divide among plates. Top with croutons and serve immediately.
    6. Serves 4.
