Fried Cod in Beer Batter
Ingredients
- 15 lbs raw, and chopped cod filets
- beer batter:
- 3 1/2 lbs flour, bread
- 2 Tbsp salt
- 2 Tbsp white pepper
- 2 Tbsp fresh or dried dill
- 1 cup oil
- 15 egg yolks
- 6/12 oz beer
- water
- 15 egg whites
- 15 wedged lemons
- 3 bunches fresh stemmed parsley
Directions
- In a mixing bowl, place the flour, making a well in the center.
- Add the egg yolks, oil, slat and white pepper.
- Add the beer slowly, and mix from the enter to sides until well-blended and smooth.
- In a separate bowl, whip the egg whites to a stiff peak.
- Gently fold them into the battter just prior to frying fish.
- Preheat deep-fat fryer to 350 F.
- Then dip cod into the batter, and drop into the deep-fat fryer, frying until goldenbrown and thoroughly cooked.
- Remove and drain in a perforated pan.
- Serve, garnishing with lemon wedges and parsley stems.
