Fresh Tomato Soup With Cilantro
Ingredients
- 1 c. Vertically sliced onion Vegetable cooking spray
- 1 tsp Extra virgin olive oil
- 1/4 c. Thinly sliced celery
- 1 sm Clove garlic, chopped
- 1 tsp Grnd cumin
- 1/2 tsp Salt
- 1/8 tsp Pepper, (1/8 to 1/4)
- 4 c. Peeled coarsely minced tomatoes
- 1/3 c. Water
- 13 3/4 ounce No-salt-added chicken broth, (1 can)
- 2 Tbsp. Minced fresh cilantro Fresh cilantro sprigs, (optional)
Directions
- Cut onion slices in half.
- Coat a large saucepan with cooking spray; add in oil, and place over medium heat till warm. Add in onion, celery, and garlic; saute/fry 5 min or possibly till tender. Add in cumin, salt, and pepper; cook 5 min, stirring frequently.
- Add in tomato, water, and chicken broth; bring to a boil. Reduce heat, and simmer, uncovered,10 min.
- Place 2-1/2 c. tomato mix in container of an electric blender; cover and process till smooth. Add in tomato puree back to mix in pan, and stir well. Add in minced cilantro, and stir well.
- Yield: 1-1/2 qts (servingsize: 1 c.).
- NOTES : Serve hot or possibly chilled; garnish with fresh cilantro sprigs, if you like.
