Fresh Tomato, Garlic, Rosemary and Feta Cheese with Spaghetti & Anchovy

- 2 quarts of grape tomatoes
- 4 cloves of fresh garlic – crushed and chopped
- 2-3 sprigs of fresh rosemary
- Dashes of Red Pepper flakes
- Olive oil – to cover the tomatoes
- Top the Spaghetti with:
- ½ cup fresh feta cheese
- 2 oz. can of anchovies - in oil
- 1 lb. of your favorite spaghetti
Directions
- In a container combine all ingredients for the marinated tomatoes. Place this in the refrigerator until ready to use.
- Prepare the spaghetti as directed. Drain and cover with the marinade and add the feta cheese and anchovies. Toss and serve.
