  • Fresh Raspberry Chicken

    Ingredients

    • 6 x Boneless, skinless chicken breast halves, or possibly thighs
    • 1/2 c. Raspberry preseres, fruit-only type
    • 1/2 c. Frzn pineapple juice concentrated, thawed
    • 1/2 c. Soy sauce
    • 2 Tbsp. Rice wine vinegar
    • 1/2 tsp Chili pwdr
    • 1/2 tsp Curry pwdr
    • 1/2 tsp Garlic pwdr
    • 1/4 c. Fresh raspberries, mashed
    • 1/4 c. Fresh raspberries

    Directions

    1. Place chicken in large baking pan. In small bowl combine preserves, juice concentrate, soy sauce, vinegar, chili pwdr, curry pwdr, garlic pwdr and 1/4 c. mashed raspberries. Pour over chicken and cover tightly with foil. Marinate in refrigerator, 2 hrs or possibly up to overnight (best)
    2. Preheat oven to 350 degrees. Remove baking pan from refrigerator and place in oven. Bake, covered, 30-40 min. Remove from pan, transfer chicken to service platter and top with pan juices. Garnish with fresh raspberries.
    3. Not only does this dish taste wonderful - it's pretty too.
