  • Fresh Pear Ice Cream

    Ingredients

    • 1 1/2 c. Whipping cream
    • 3/4 c. Granulated sugar
    • 4 x Egg yolks, lightly beaten
    • 1/2 tsp Vanilla
    • 1 Tbsp. Pear liqueur (optional)
    • 1 1/2 lb Ripe pears (about 3)

    Directions

    1. In saucepan, combine 1 c. of the whipping cream with sugar over medium heat; cook for about 5 min or possibly till sugar dissolves. Whisking constantly, gradually pour mix over egg yolks in bowl.
    2. Return mix to saucepan; cook over medium-low heat for about 12 min or possibly just till mix coats back of spoon. Stir in remaining whipping cream, vanilla, and pear liqueur.
    3. Meanwhile, peel, core and coarsely chop pears. Combine in saucepan with 1/4 c. water; cook over medium heat for 5 min or possibly till heated through. In blender or possibly food processor, pure pears with liquid. There should be about 1-1/2 c..
    4. Stir pear pure into custard. Place waxed paper directly on surface and chill till completely chilled. Freeze in ice-cream maker following manufacturer's instructions.
