    This is so simple and taste wonderful. When you blanch it first it seems to have a sweeter flavor to it. It's even good cold. You can do this dish with any Fresh Greens. Spinach is amazing this way...just add a pinch of nutmeg to it. A sprinkle of Parmesan cheese is a good touch Great as a side dish to Quiche

    Ingredients

    • 2 large bunches of kale (fresh)
    • 2 Tbsp olive oil, extra virgin
    • 4 or more clove fresh garlic, sliced
    • 1/4 tsp sea salt
    • 1/4 tsp black pepper
    • 3 Tbs romano cheese, grated (opt)
    • pinch freshly grated nutmeg (opt )
    • Little health tip ( when buying cleaned and cut greens you are losing some of the Vitamins,therefore it is better to buy them whole and you cut them yourself)

    Directions

    1. Remove large stems from Kale and chop.
    2. Blanch kale (put kale in boiling water for no more than 2 minutes. Drain and put into Ice/water bath,drain.) set aside.
    3. Heat olive oil,med heat
    4. Add sliced garlic to olive oil and saute' for about one minute.
    5. Add Kale. toss in the olive oil and garlic to coat and reheat. (It should still be a bit warm)
    6. Add salt,pepper... more or less depending on taste.
    7. Remove to serving platter and add grated cheese.
    8. Serve alone or as a side dish to any meats.
    9. Can be served on top of rice or pasta.
    10. OPT...Grate nutmeg over Kale for a different taste.
