  • Fresh Cherry Crunch

    Ingredients

    • 1 c. All purpose flour
    • 1 c. Quaker Oats, uncooked
    • 1 c. Dark Brown Sugar firmly packed
    • 1 c. Butter
    • 3 c. Fresh cherries, pitted
    • 1 c. Granulated white sugar*
    • 1 c. ,water
    • 3 Tbsp. Cornstarch
    • 1/2 tsp Pure Almond Extract
    • 1 c. Semi-sweet chocolate chips

    Directions

    1. * When adding chocolate chips to this recipe, use 1/2 c. granulated sugar instead of 1 c..
    2. Preheat oven to 375 degrees F.
    3. Combine the crunch crust mix till it resembles coarse crumbs. Pat 3/4 of the mix into a 9 x 9 inch baking pan, reserving the remaining crumbs for the top, and set aside.
    4. Combine the filling mix, except the almond extract and bring to a boil, stirring constantly, till thickened. Let cold slightly and stir in the almond extract.
    5. Pour filling onto crumb mix and, if adding the chocolate chips, sprinkle them over the filling and top with remaining crumbs. Bake at 375 degrees F. for about 45 min.
    6. When cold, cut into squares.
    7. Note: This is a very rich dessert!
