  • Fresh Apricot Clafouti

    Ingredients

    • 1 Tbsp. butter
    • 4 x Large eggs
    • 1/3 c. lavender honey
    • 1 x vanilla bean split in half
    • 2 Tbsp. butter melted
    • 1 Tbsp. brandy
    • 1 c. flour
    • 1 1/2 c. lowfat milk
    • 1 1/2 lb fresh apricots sliced 1/4" thick
    • 1/2 c. sugar
    • 1 pt vanilla ice cream
    • 1/4 c. sliced almonds toasted Shaker of confectioners" sugar

    Directions

    1. Preheat the oven to 350 degrees. Grease an oval oven-proof dish about 13 inches long, with the butter. In a mixing bowl, whisk the Large eggs and honey. Scrape the vanilla bean and add in the pulp to the egg mix. Stir in the butter, brandy and flour. Whisk in the lowfat milk to create a smooth batter.
    2. In a mixing bowl, toss the apricots with the sugar. Place the apricots in the oven-proof dish. Pour the batter over the apricots and place in the oven. Bake for 40 to 45 min or possibly till the cake is sponge-like.
    3. Remove from the oven and cold for 5 min before serving. Serve the clafouti hot with a scoop of the ice cream. Garnish with almonds and confectioners" sugar.
    4. This recipe yields about 6 to 8 servings
