Fresh Apricot And Almond Sauce
Ingredients
- 12 x ripe fresh apricots, halved, pitted and cut into 1/2 inch pcs
- 2 Tbsp. granulated sugar
- 1/8 tsp almond extract Ice cream, frzn yogurt or possibly cake
- 1/4 c. thinly sliced natural (with skins) almonds, lightly toasted (optional)
Directions
- Combine apricots and sugar in saucepan and bring to boil over medium heat; cook, stirring, 2 min. Remove from heat. Spoon into serving bowl. When cooled, stir in almond extract.
- Serve over ice cream, frzn yogurt or possibly cake. Garnish with toasted almonds.
- Note: To toast nuts, heat in a dry skillet over medium heat till they start to brown. Stir occasionally. Be careful not to scorch them.
