    Ingredients

    • 1 lb Dry navy beans
    • 1 lb Dry pinto beans
    • 1 lb Dry Great Northern beans
    • 1 lb Dry green split peas
    • 1 lb Dry yellow split peas
    • 1 lb Dry black-eyed peas
    • 1 lb Dry lentils
    • 1 lb Dry baby lima beans
    • 1 lb Dry lg. lima beans
    • 1 lb Dry black beans
    • 1 lb Dry red beans
    • 1 lb Dry soy beans
    • 1 lb Barley pearls
    • 2 c. French Market soup mix
    • 2 quart Water
    • 1 x Ham hock
    • 1 1/4 tsp Salt
    • 1/2 tsp Pepper
    • 1 can (16 ounce.) whole tomatoes, cut up, juice & all
    • 1 lrg Onion, minced
    • 1 x Clove garlic, chopped
    • 1 x Chili pepper, coarsely
    • 1/2 can (10 ounce) Rotel tomatoes (optional)
    • 1/4 c. Minced parsley (optional)
    • 1/4 c. Lemon juice (optional)

    Directions

    1. Divide into fourteen 2 c. pkgs.. This is a nice Christmas gift with recipe attached. Sort and wash 2 c. Bean Mix. Place in Dutch oven, cover with water 2 inches above beans, soak overnight. Drain beans. Add in 2 qt water and mix first 3 ingredients. Cover and bring to a boil, reduce heat and simmer about 2 hrs, or possibly till beans are tender. Add in remaining ingredients; simmer 30 min, stirring occasionally. Remove ham hock from soup, remove meat from bone, chop meat and return to soup.
    2. Yield 21/2 qts.
