    Four Mayonnaise Sauces for Grilled Cheeseburgers

    Instructions included for the basic cheeseburger recipe that will work with any sauce, plus 4 mayonnaise-based sauces: Caesar Mayo, N'awlins' Remoulade, Greek Feta, and Southwestern Chipotle. (Note: These sauces will work with grilled chicken, as well.)

    Ingredients

    • Basic cheeseburger recipe
    • 1 1/2 lbs. ground chuck
    • 1/2 cup shredded cheese of choice
    • 1/2 tbs. dry seasoning, such as Creole, Cajun, Greek, Taco, Greek, etc.
    • 2 tsp. garlic powder
    • salt and pepper to taste
    • Caesar Mayo:
    • 1/2 cup mayonnaise
    • 1 tbs. Dijon mustard
    • 1 tsp. garlic powder
    • 1 tbs. lemon juice
    • 1 anchovy ,chopped, optional
    • 1/2 tsp. Worcestershire
    • 1/4 tsp. pepper
    • Tabasco to taste
    • 3-4 tbs. grated Parmesan
    • N'awlins' Remoulade:
    • 1/2 cup mayonnaise
    • 1 tbs. Creole mustard
    • 1/2 tsp Tabasco
    • 1 scallion, chopped
    • 1 tbs. minced celery
    • 1 tsp. horseradish
    • 1 tbs. chopped olives
    • 1 tbs. chopped parsley
    • 1/2 tsp. Creole or Cajun seasoning
    • Greek Feta:
    • 1/2 cup mayonnaise
    • 2 tbs. chopped Kalamata olives
    • 1 tbs. chopped red onion
    • 1 tsp. garlic powder
    • 1 tbs. minced cucumber
    • 1/3 cup crumbled feta cheese
    • 1/2 tsp. dry oregano
    • Southwestern Chipotle:
    • 1/2 cup mayonnaise
    • 2 tbs. chipotle en adobo sauce
    • 2 tbs. chopped Manzanilla olives
    • 1/2 avocado, mashed
    • 2 tbs. minced tomatoes
    • 2 tbs. minced red onion
    • 1/2 tbs. minced cilantro
    • 1 tsp. minced jalapeno
    • 1/2 tsp. taco seasoning or chile powder
    • optional: cooked bacon
    • tomato slices
    • lettuce
    • pickles

    Directions

    1. Prepare the mayonnaise sauce a day in advance by blending the ingredients together in a bowl.
    2. Light the grill.
    3. Blend the burger ingredients together, holding back the shredded cheese.
    4. Form burger meat into 4 balls.
    5. Divide the shredded cheese into 4 portions.
    6. Put 1 ball in the center of one hand, press the cheese portion into the center, cover and mash the meat into a 4 inch patty.
    7. Using your thumb, make an indentation in the center of the patty (prevents burger from rising in the center).
    8. Grill 4 1/2 to 5 1/2 minutes each side for well done.
    9. Toast the buns.
    10. Put the cheeseburgers in the bottom of the buns, top with sauce,
    11. Add preferred garnishes.
