    Ingredients

    • 3 ounce Crab meat, cooked chicken or possibly shrimp (optional)
    • 4 Tbsp. Peanut oil
    • 1 x Spring onion, shredded (green onion)
    • 1 ounce Bamboo shoots, shredded
    • 1 c. Bean sprouts
    • 5 x Large eggs
    • 1/4 tsp Salt
    • 2 Tbsp. Water
    • 6 Tbsp. Chicken stock
    • 1 pch Sugar
    • 1 tsp Soy sauce
    • 2 tsp Ketchup
    • 1 tsp Cornstarch

    Directions

    1. Shred crab meat or possibly chicken if using. Heat 1 Tbsp. of oil in pan and fry onion and bamboo shoots for 1 minute. Beat Large eggs, add in onion, bamboo shoots, bean sprouts, 1/4 ts salt, 2 tb water and crab. Heat another Tbsp. oil in the pan, add in chicken stock, healthy pinch salt, sugar, soy sauce, ketchup and cornstarch. Mix all well, bring to the boil and keep warm while making omelette. Heat 2 Tbsp. oil in omelette pan, stir in egg mix, cook. Put on warm dish, pour sauce over.
