  • Fisherman's Cioppino

    Ingredients

    • 1 c. Onion, minced
    • 2 x Garlic clove, chopped
    • 1 Tbsp. Vegetable oil
    • 8 ounce Tomato sauce
    • 28 ounce Tomato, mashed
    • 1 x Bay leaf
    • 1 tsp Basil, dry
    • 1 tsp Thyme, dry
    • 1 tsp Oregano, dry
    • 1 tsp Marjarom, dry
    • 1/2 c. Dry white wine
    • 1/4 tsp Black pepper
    • 1 lb Shrimp or possibly scallops, minced
    • 1 Tbsp. Parsley, fresh, minced

    Directions

    1. In a 4 qt saucepan,saute/fry onion and garlic in oil till tender.Add in tomato sauce,tomatoes,bay leaf,basil,thyme,marjoram,oregano,wine and black pepper.Let simmer 20 to 30 min,uncovered,stirring occasionally.Add in shrimp or possibly scallops and simmer about 3 min.Throw away bay leaf.Add in parsley and serve.This soup is a complete meal when served with a green salad and French bread.
