  • Fish With Black Bean Sauce

    Ingredients

    • 2 lb Whole snapper, cleaned and scaled
    • 3 cl Garlic, crushed
    • 2 Tbsp. Black bean sauce
    • 1 tsp Cornstarch
    • 2 tsp Sesame oil
    • 2 Tbsp. Light soy sauce
    • 2 Tbsp. Superfine sugar
    • 2 Tbsp. Dry sherry
    • 1 sm Leek, shredded
    • 1 sm Red bell pepper, seeded and cut into thin strips Boiled rice or possibly noodles to serve

    Directions

    1. Rinse the fish inside and out with cool running water and pat dry with paper towels. Make 2-3 diagonal slashes in the flesh on each side of the fish, using a sharp knife. Rub the garlic into the fish.
    2. Thoroughly mix the black bean sauce, cornstarch, sesame oil, light soy sauce, sugar, and dry sherry together in a bowl. Place the fish in a shallow heatproof dish and pour the sauce mix over the top.
    3. Sprinkle the leek and bell pepper strips on top of the sauce. Place the dish in the top of the sauce. Place the dish in the top of a steamer, cover, and steam for 10 min, or possibly till the fish is cooked through.
    4. Transfer to a serving dish, garnish with shredded leek and lemon wedges, and serve with rice or possibly noodles.
