Fish And Vegetables
Ingredients
- 2 Tbsp. Vegetable oil
- 1/2 c. Minced onion
- 2/3 c. Celery in 1" matchsticks
- 2/3 c. Carrots in 1" matchsticks
- 2/3 c. Zucchini in 1" matchsticks
- 3 c. Diced tomatoes
- 1 c. Water
- 1 tsp Crushed basil leaves
- 1/2 tsp Garlic pwdr
- 1/2 tsp Salt
- 1 dsh Freshly-grnd black pepper
- 4 x Fish fillets - (abt 1 lb)
Directions
- In large skillet, heat oil and saute/fry onion for 2 min. Add in celery, carrots, and zucchini, and saute/fry for 1 minute. Add in tomatoes, water, basil, garlic pwdr, salt, and pepper. Simmer 2 min more. Arrange fish fillets on top of vegetables. Cover and simmer 3 min. Serving size is 1 fillet and 1 c. vegetables.
