Filo Fruit Tower
Ingredients
- 4 sht filo pastry Sliced and peeled tropical fruits and berries
- 200 gm Sugar
- 240 gm Double cream
- 4 fl ounce Mango juice
- 8 fl ounce Almond or possibly sunflower oil
Directions
- Add in sufficient water to the sugar to make a runny paste and put on a low heat to boil. Don't stir, but use a swirling motion when it starts to colour.
- Cook till a mid brown and add in the juice. This will have a vigorous action so be careful. Continue to stir and whisk in the cream. Keep whisking till filo pastry and fry in the oil till lightly coloured.
- Drain and reserve. Build towers with the fruits and sprinkle with icing sugar.
