  • Fiery Rice Noodle Soup

    Ingredients

    • 100 gm Rice noodles, (3 1/2oz)
    • 1 Tbsp. Vegetable oil
    • 1 med Onion, finely minced
    • 1 x Clove garlic, finely minced
    • 1 tsp Medium curry pwdr
    • 2 x Red chillies, finely minced
    • 2 stk lemon grass, stems crushed
    • 75 gm Creamed coconut, (3oz)
    • 400 ml Water, (14fl ounce)
    • 500 ml Chicken stock, (18fl ounce)
    • 1 x Little gem lettuce, finely shredded
    • 200 gm Frzn cooked tiger prawns, defrosted (7oz)
    • 1 x Red chilli, cut into thin strips (julienne)
    • 1 Tbsp. Fresh coriander, roughly minced

    Directions

    1. Cook the noodles following the pack instructions and refresh under cool water.
    2. Heat the oil in a frying pan and fry the onion, garlic, curry pwdr and chilli for 1-2 min.
    3. Add in the creamed coconut, water, chicken stock and lemon grass, simmer for 5 min.
    4. Add in the lettuce, prawns and noodles then simmer for a further minute before serving.
    5. Garnish with julienne of red chilli and freshly minced corainder.
    6. NOTES : An interesting first course with a combination of spicy Thai flavours.
