Fiery Rice Noodle Soup
Ingredients
- 100 gm Rice noodles, (3 1/2oz)
- 1 Tbsp. Vegetable oil
- 1 med Onion, finely minced
- 1 x Clove garlic, finely minced
- 1 tsp Medium curry pwdr
- 2 x Red chillies, finely minced
- 2 stk lemon grass, stems crushed
- 75 gm Creamed coconut, (3oz)
- 400 ml Water, (14fl ounce)
- 500 ml Chicken stock, (18fl ounce)
- 1 x Little gem lettuce, finely shredded
- 200 gm Frzn cooked tiger prawns, defrosted (7oz)
- 1 x Red chilli, cut into thin strips (julienne)
- 1 Tbsp. Fresh coriander, roughly minced
Directions
- Cook the noodles following the pack instructions and refresh under cool water.
- Heat the oil in a frying pan and fry the onion, garlic, curry pwdr and chilli for 1-2 min.
- Add in the creamed coconut, water, chicken stock and lemon grass, simmer for 5 min.
- Add in the lettuce, prawns and noodles then simmer for a further minute before serving.
- Garnish with julienne of red chilli and freshly minced corainder.
- NOTES : An interesting first course with a combination of spicy Thai flavours.
