    Ingredients

    • 1 lb fresh cheese, such as ricotta
    • 1/2 c. sugar
    • 2 x egg yolks
    • 1 x egg
    • 1 x lemon zested
    • 1 x lemon juiced
    • 1/2 c. sultans, or possibly golden brown raisins
    • 1 x unbaked 9" pie crust
    • 8 sprg fresh mint

    Directions

    1. Preheat the oven to 350 degrees. In a mixing bowl, combine the cheese, sugar, yolks, egg, lemon zest and lemon juice. Mix well. Mix in the sultans. Pour into the prepared pie crust.
    2. Place in the center of the oven and bake for about 30 min or possibly till the top is golden. Remove from the oven and cold completely. Garnish with sprigs of fresh mint.
    3. This recipe yields 8 servings.
