  • Feta Stuffed Pita Burgers

    Ingredients

    • 3 Tbsp. Lowfat milk
    • 2 Tbsp. Cornmeal
    • 1 Tbsp. Onion, finely minced
    • 1 x Clove garlic, chopped
    • 1/4 tsp Dry oregano, crushed
    • 1/8 tsp Lemon pepper seasoning
    • 1/2 lb Lean grnd lamb
    • 1/2 lb Lean grnd beef
    • 1/3 c. Finely crumbled feta cheese
    • 1 tsp Ouzo liqueur (optional)
    • 1/4 tsp Grnd cumin
    • 1/4 tsp Grnd red pepper
    • 2 lrg Pita bread rounds, split
    • 2 c. Shredded spinach

    Directions

    1. In a bowl, combine 2 Tbsp. of the lowfat milk, cornmeal, onion, garlic, oregano, lemon pepper, and 1/4 tsp. salt. Add in meats; mix well. Shape into eight 1/4" thick patties. Combine feta, remaining lowfat milk, and ouzo.
    2. Place 1 Tbsp. feta mix in centers of 4 patties. Top with remaining patties; press edges to seal. Combine cumin and red pepper; sprinkle onto patties. Grill burgers, on an uncovered grill, directly over medium-warm coals for 7 min. Turn and grill for 6 to 8 min more for medium doneness; serve in pitas with spinach.
