Feel-Good Chili
Ingredients
- 2 pounds ground chuck (a little better quality ground beef)
- 1 onion, chopped
- 3 stalks of celery, sliced
- 1 fresh jalapeno pepper, membrane and seeds removed, diced
- 1 16oz can of diced tomatoes
- 1 8oz can of tomato puree
- 1 can beef broth (or 2 cups water and 2 tsps beef bouillon granules)
- 1 Tbsp chili powder
- 1 Tbsp ground cumin
- salt and black pepper to taste
- 1 16oz can kidney beans, drained and rinsed
- shredded cheddar cheese for garnish
- sour cream for garnish
Directions
- Brown ground beef in a Dutch oven.
- Add onion, jalapeno, and celery.
- Cook until onion is soft and transparent.
- Reduce heat.
- Add tomatoes, tomato puree, beef broth, chili powder, cumin, salt, and pepper.
- Simmer for twenty minutes, stirring occasionally.
- Add kidney beans and heat through.
- Serve with garnishes.
