  • Feel-Good Chili

    Ingredients

    • 2 pounds ground chuck (a little better quality ground beef)
    • 1 onion, chopped
    • 3 stalks of celery, sliced
    • 1 fresh jalapeno pepper, membrane and seeds removed, diced
    • 1 16oz can of diced tomatoes
    • 1 8oz can of tomato puree
    • 1 can beef broth (or 2 cups water and 2 tsps beef bouillon granules)
    • 1 Tbsp chili powder
    • 1 Tbsp ground cumin
    • salt and black pepper to taste
    • 1 16oz can kidney beans, drained and rinsed
    • shredded cheddar cheese for garnish
    • sour cream for garnish

    Directions

    1. Brown ground beef in a Dutch oven.
    2. Add onion, jalapeno, and celery.
    3. Cook until onion is soft and transparent.
    4. Reduce heat.
    5. Add tomatoes, tomato puree, beef broth, chili powder, cumin, salt, and pepper.
    6. Simmer for twenty minutes, stirring occasionally.
    7. Add kidney beans and heat through.
    8. Serve with garnishes.
    9. Enjoy!!
