    From a friend long ago, this is definitely my banana bread recipe fav. Next time you’ve got ripe bananas to use up, give this one a try!

    Ingredients

    • 2 cups all-purpos flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup butter, softened
    • 1 cup sugar
    • 2 eggs
    • 2 tablespoon water
    • 1 1/2 cups very ripe bananas mashed (about 3 large)
    • 3/4 cup chopped walnuts

    Directions

    1. Heat oven to 350 degrees F. Grease a 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan and set aside.
    2. Stir together flour, baking powder, baking soda and salt in medium bowl.
    3. In large mixing bowl combine butter and sugar, beating well. Add eggs and water, and beat. Stir in bananas and mix well. Stir in flour mixture and walnuts, mixing just until ingredients are moistened.
    4. Push batter into prepared loaf pan. (If there's too much batter for loaf pan, bake the extra in a custard cup, reducing the bake time for that size proportionally.)
    5. Bake 45-55 minutes or more until loaf is golden brown and tests done in middle with cake tester or toothpick.
