Fava Bean Puree Bissara (Morocco)
Ingredients
- 2 c. Large dry fava beans, soaked overnight And liquid removed
- 3 x Cloves garlic, crushed Salt, to taste
- 1/2 c. Extra virgin olive oil
- 8 c. Water
- 5 Tbsp. Lemon juice
- 2 tsp Cumin
- 1 tsp Paprika
- 1/2 tsp Chili pwdr
- 1/2 c. Minced parsley
Directions
- Place the fava beans, garlic, salt, 4 Tbsp. of the extra virgin olive oil, and water in a pot; then cook over medium heat till the beans are tender.
- Place the beans in a food processor and process till smooth, then return to the pot. Add in the lemon juice and cumin, and cook for 5 min over low heat. Spoon onto a serving platter. Pour the remaining extra virgin olive oil proportionately over the top; then sprinkle with the paprika and chilli powders. Garnish with the parsley and serve.
