Fatty Cheong's Char Siew
This is a recipe that a friend found for me at http://ieatishootipost.sg when I was thinking about making Chinese style BBQ ribs. When I made this, I used boneless country style ribs, and marinated them over night. I found that this made enough marinade for 2 different applications. Ingredients
- 1 kg Pork Collar (if you like it juicy) or Pork Shoulder (if you like it leaner)
- 500g Sugar
- 300g Oyster Sauce
- 300g Bean Paste (Dou Jiang)
- 200ml Soya Sauce
- 3 teaspoon Rice Wine
- 2 teaspoon Black Soya Sauce
- 2 teaspoon Red Colouring (optional)
Directions
- Mix all ingredients, marinade at least 1 hour, overnight for a better curing effect.
- Roast or grill meat, turning frequently until fully cooked.
