  • Eye of Round Roast

    This is a time tested recipe for an Eye of Round roast that is a special occasion meal. One that will impress your family and friends.

    Ingredients

    • 1. 1 3lb. Eye of Round
    • 2. Sea salt or Kosher salt and fresh cracked or ground black peppercorns.

    Directions

    1. 1. Heat the oven to 500, keep oven door closed. Season the beef with the salt and pepper. Plenty of black pepper. Do not add any liquid or water to the pan.
    2. 2. Place the roast in the pan and place in the oven. Lower the temp to 475 deg. Roast for 21-25 mins. 7 mins. per lb.
    3. 3. Turn off the oven and DO NOT OPEN THE DOOR for 2 and 1/2 hours. The oven door must remain closed all this time of roasting.
    4. 4. At the end of the 2 1/2 hours time, remove the roast and check internal temp. Should be 145 degrees. If it is not place it back in the oven and set temp at 375 and bake for 15 minute intervals until you reach 145 degrees.
    5. 5. When temp is 145 degrees, remove and "tent" the roast and allow to rest for 15 mins.
    6. 6. Slice in thin slices and serve with the rest of your meal.
