  • Everything From The Garden Frittata

    Ingredients

    • 2 tsp extra virgin olive oil
    • 1/2 c. minced onion
    • 2 x garlic cloves chopped
    • 1/2 c. diced red peppers
    • 1/2 c. diced green peppers
    • 1/2 c. minced zuchini
    • 1/2 c. minced broccoli
    • 8 x Large eggs beaten
    • 2 Tbsp. water
    • 1/2 tsp dry oregano
    • 1/2 tsp dry basil Salt to taste Freshly-grnd black pepper to taste
    • 2 x tomatoes thinly sliced
    • 3 Tbsp. Parmesan cheese

    Directions

    1. Heat the oil in a large , nonstick, oven-proof skillet over medium heat. Add in the onion and garlic and saute/fry for 3 min. Add in the peppers, zucchini, and broccoli and saute/fry for 4 min.
    2. Combine the Large eggs, water, dry seasonings, pepper, and salt. Pour Large eggs over the vegetables and cook over medium heat for about 8 min till Large eggs look almost set on the bottom.
    3. In a circle, top the Large eggs with the tomatos. Sprinkle with cheese. Set the oven to broil. Place the skillet in the oven and broil 7 inches from the heat till Large eggs are set on top and cheese is lightly browned. Watch carefully.
    4. Remove the Large eggs from the oven and cut into wedges to serve.
    5. This recipe yields 4 servings.
    6. Serving size: 2 Large eggs, 1/2 c. vegetables.
    7. Comments: Pick up the onions, peppers, zuchini, broccoli, and tomatoes from the salad bar. Large eggs are a refrigerator staple (use egg substitutes if you like, to lower the fat and cholesterol count).
