  • Esther's Fruit Cocktail Cake

    Ingredients

    • 1 1/2 c. sugar
    • 2 large eggs
    • 1/2 c. salad oil
    • 2 c. flour
    • 1/2 teaspoon salt
    • 2 teaspoon baking soda
    • 1 med. can fruit cocktail
    • 1/2 c. flaked coconut
    • 1 recipe frosting
    • 1 stick butter
    • 1 teaspoon vanilla
    • 1/2 c. flaked coconut
    • 3/4 c. sugar
    • 1/2 c. evaporated lowfat milk
    • 1/2 c. minced nuts

    Directions

    1. Beat sugar, large eggs and oil together. Add in flour, salt and soda. Add in fruit cocktail with juice and mix well by hand. Pour batter into 9 x 13 inch greased pan. Sprinkle coconut over top of batter. Bake 45 min at 350 degrees.
    2. Put butter, lowfat milk, sugar and vanilla in saucepan, bring to boil, stirring constantly. When thick, add in coconut and nuts. Spread on cake while both are hot.
