  • Escarole And Ham Salad

    Ingredients

    • 1/2 c. Vegetable oil or possibly extra virgin olive oil
    • 30 lrg Garlic cloves,, peeled
    • 1/2 lb Country ham,, cut into 1/4-inch cubes
    • 1 lrg Head escarole, washed and dry, torn or possibly, cut into bit
    • 1 lrg Head Romaine, washed and dry, torn or possibly, cut into bite
    • 2 Tbsp. Finely minced thyme or possibly basil, (optional)
    • 1 c. Red wine vinegar Freshly grnd black pepper

    Directions

    1. Heat half the oil in a large frying pan. Add in the garlic and cook over medium-low heat till golden and tender, about 30 min. Add in more oil as needed. Add in the country ham and toss briefly to coat and marry the flavors. Set aside till needed, up to 1 day. When ready to serve, reheat the oil, garlic, and ham mix. When warm, add in the lettuce and toss for 1 to 2 min, till well coated with the juices and slightly wilted. Taste.
    2. Add in the herbs, vinegar, and pepper as needed.
    3. Yield: 4 to 6 servings
