    This is a simple, caky cobbler that can be made with any seasonal fruit. I happen to think it goes best with peaches. In a pinch, you can even make it with good quality, canned peaches, and it will turn out moist and delicious.

    Ingredients

    • 1/2 cup sugar
    • 1/4 cup butter or margarine
    • 1 egg
    • 1/2 cup milk
    • 1 cup flour
    • 2 tsps. baking powder
    • dash salt
    • 1 tsp. vanilla
    • 2 cups sliced fresh peaches or other fruit
    • 1/3 cup honey
    • 1 cup boiling water
    • 1 T. butter or margarine

    Directions

    1. Cream sugar and butter. Add egg and beat well. Stir in milk. Sift together flour, baking powder, and salt. Add to sugar mixture and beat until smooth. Stir in vanilla. Spread evenly over bottom of 8 inch square banking pan. Mix peaches (or other fruit), honey, boiling water, and butter/margarine. Pour over top of batter. Bake in 375 degree oven for 45 mins. The cake will rise to the top during baking.
