  • Enola's Simple Vegetable Soup

    Ingredients

    • 10 c. Water
    • 2 Tbsp. Salt-free Beef bouillon granules
    • 2 can (14oz ea) stewed tomatoes
    • 1 can (16oz) French-style Green beans
    • 1 pkt (10z) frzn mixed veggies
    • 1 pkt (10z) frzn corn
    • 1 c. Onion(s), minced
    • 1/2 c. Celery, minced
    • 1/2 c. Green bell pepper, minced
    • 1/2 c. Red bell pepper, minced
    • 1 tsp Salt
    • 1/4 tsp White pepper
    • 1/2 c. Orzo

    Directions

    1. In a 5-qt Dutch oven over high heat, bring the water to a boil. Add in the beef bouillon granules, stirring well. Add in all the remaining ingredients except the orzo; cook, covered, for 30 minutes. Reduce heat to a simmer, add in the orzo and cook for 20 minutes more, stirring occasionally.
