English Shortbread

- 8oz sugar
- 16ozs butter room temp ( absolutely NO substitute!)
- 24 oz flour
- 1 egg
Directions
- empty flour on to work surface
- rub better into flour until mix resmebles bread crumbs
- add sugar
- make a well in center
- add 1 egg beaten
- roll into ball
- chill for 20 mins
- roll out onto lightly floured surface until desired thickness ( 1/2 inch?)
- cut into sesired shapes
- lay onto a lined baking sheet
- sprinkle with sugar
- bake on top shelf of oven
- 350f convection 365f reg until set and one shade darker than raw dough. (underside will be lighly golden)
- Leave on tray to cool.
- decorate
- If using a kitchenaid or similar, put all ingedients into mixer and work on #1 until ingredients ball.
