    Tasty, hearty fiber bread. Good with a cup or coffee or tea in the morning. Yummy way to add fiber to your diet. Recipe calls for self -rise flour but if you don't have self rise just use 1 cup of all-purpose flour and add 1 tsp of baking powder and a 1/2 tsp of salt. Recipe also requires a 1 hour soak of the cereal.

    Ingredients

    • 1 cup Fiber cereal (like Fiber One)
    • 1 cup Raisins
    • 1 cup Milk
    • 3/4 cup Dark Brown Sugar
    • 1 cup self-rise flour (see note in summary)

    Directions

    1. Mix Fiber cereal, raisins, milk and dark brown sugar together in a medium bowl and soak for one hour.
    2. Preheat oven to 350.
    3. Mix the flour into the soaked fiber raisin mixture.
    4. Spoon into a greased 9x5x3 loaf pan
    5. Bake for 1 hour
    6. Let stand 10 mins then remove from pan to a cooling rack
