English Cottage Pie
Ingredients
- 1 T flour
- 1 T butter
- 1 1/2 cups chopped onions
- 1/2 cup shredded carrots
- 1/2 cu2 peas
- 1/2 cup green beans
- 1 (8 oz) package mushrooms, sliced
- 1 1/2 -2 lbs. ground beef
- 2 T tomato paste
- 1 cup beef broth
- pepper (to taste)
- 1/4 cup fresh parsley - chopped
- 1 T fresh thyme
- salt (to taste)
- 4 cups - or more - mashed potatoes
- 1 cup cheddar cheese
Directions
- Preheat oven to 350.
- Combine flour & butter in a bowl; stir well.
- Heat a large non-stick Stir in tomato paste & cook 3 minutes.
- Stir in beef broth & return vegetables to pan. Bring to a simmer.
- Add parsley & thyme, salt & pepper to taste.
- Add flour mixture & cook for 1 minute or until thick, stirring constantly.
- Put meat & vegetable mixture in 8 inch square glass or ceramic baking dish coated with cooking spray.
- Combine potatoes & 1/2 of cheese, spread evenly over meat & vegetables.
- Top with remaining cheese.
- Bake at 350 for 20 minutes or until bubbly.
