    Ingredients

    • 1 T flour
    • 1 T butter
    • 1 1/2 cups chopped onions
    • 1/2 cup shredded carrots
    • 1/2 cu2 peas
    • 1/2 cup green beans
    • 1 (8 oz) package mushrooms, sliced
    • 1 1/2 -2 lbs. ground beef
    • 2 T tomato paste
    • 1 cup beef broth
    • pepper (to taste)
    • 1/4 cup fresh parsley - chopped
    • 1 T fresh thyme
    • salt (to taste)
    • 4 cups - or more - mashed potatoes
    • 1 cup cheddar cheese

    Directions

    1. Preheat oven to 350.
    2. Combine flour & butter in a bowl; stir well.
    3. Heat a large non-stick Stir in tomato paste & cook 3 minutes.
    4. Stir in beef broth & return vegetables to pan. Bring to a simmer.
    5. Add parsley & thyme, salt & pepper to taste.
    6. Add flour mixture & cook for 1 minute or until thick, stirring constantly.
    7. Put meat & vegetable mixture in 8 inch square glass or ceramic baking dish coated with cooking spray.
    8. Combine potatoes & 1/2 of cheese, spread evenly over meat & vegetables.
    9. Top with remaining cheese.
    10. Bake at 350 for 20 minutes or until bubbly.
