Enfrijoladas (Fried Tortillas With Beans And Sauce)
Ingredients
- 125 ml Veg. oil, (4 fl ounce)
- 8 x Corn tortillas or possibly 4 wheat flour tortillas
- 500 gm Frijoles Refritos, (re-fried beans), (1lb)
- 300 ml Salsa de Jitomate, (tomato sauce), 1/2 pint)
- 125 gm Crumbly white cheese, such as Wensleydale (4oz)
- 1 x Onion, minced finely
- 250 gm Chorizo, crumbled, fried and liquid removed (8oz)
- 2 x Green chillies, minced finely
Directions
- Heat the oil in a frying pan and toss each tortilla in it for 1 minute, turning once and removing from the oil when just light brown.
- Drain the tortillas on absorbent paper and keep them hot.
- Spread each tortilla with the warm re-fried beans and 2 Tbsp. of the cooked tomato sauce and then sprinkle it with some of the cheese, onion, chorizo and chillies.
- Serve immediately.
