    Easy, homemade red enchilada sauce recipe.

    Ingredients

    • olive oil, 2 Tb
    • chilli flakes, 1-2 tsp
    • one onion, chopped
    • 4 cloves garlic, minced
    • cilantro, quarter bunch, stems and leaves separated
    • chilli powder, 3-4 Tb
    • cumin, 1 tsp
    • thyme, 1 tsp
    • cocoa powder, 1 tsp
    • flour, 3-4 Tb
    • tomato sauce, 3 cups
    • chicken broth, 2 cups
    • salt and pepper to taste

    Directions

    1. In a large saucepan, saute chilli flakes, onion and spices in oil with a pinch of salt and black pepper until softened, then add cocoa, garlic and minced cilantro stems. Sprinkle in flour and cook, whisking occasionally, for a minute. Whisk in tomato sauce, simmer a minute, then add chicken stock. Simmer for 30 minutes, stirring occasionally to prevent sticking on bottom of saucepan. Taste for seasoning. Toss in cilantro leaves and use in desired recipe.
